Though its historical roots are planted across the Southern states, barbecue has been BOOMING on the west coast, and especially in the Bay Area!! After digging into brisket, shoulder, or ribs, it’s impossible to deny the delicious power of smoke, as well as the wonderful variety of regional flavors that come with it! Well friends, prepare to bring this tasty Southern tradition to your kitchen!
In Urban Pitmaster: Learn to Slow Smoke Barbecue, Ben Thorne, Chef of Southpaw BBQ, will share some of the secret sauce that goes into his own BBQ cooking magic. With emphasis on the styles and flavors of the Carolinas, Ben will guide you through the different ingredients that go into popular regional barbecue sauces, talk about the differences between wet rubs and dry rubs, and show you how to combine spices to produce your own dry rub too! For this class, you will focus on pork shoulder and beef brisket in the live demonstration, but also will learn tips for cooking other meats and vegetables. Ben will talk you through the operation of a commercial smoker, and how to slow smoke barbecue. He will give you tips on using smaller, store-bought smokers, since your shoebox of an apartment probably can’t house those industrial smoking monsters. After trying a few samples of the barbecue meats and sauces (as well as a complimentary draft brew from the Southpaw bar), you’ll leave with a sampler of Carolina BBQ sauce, your own dry rub, and a cheat sheet including all of the cooking tips, instructions, and ingredients for slow smoking at home. You’ll also receive a resource guide to tell you where to purchase a smaller smoker, which are best, and which local SF butcher shops can supply you with the best cuts of meat. Instructor Bio: While touring with his band through North Carolina, Ben Thorne fell in love with the different varieties of BBQ from that region. Upon returning to San Francisco, he and a friend began perfecting their own BBQ cooking style, and in 2008, launched Sneaky’s BBQ to offer his homage to those time-honored Southern cooking traditions. In October 2015, Ben found a permanent home for Sneaky’s at local Mission-favorite Southpaw BBQ. After years of individual operation and mutual respect, owners and long-time friends Elizabeth Wells, Zack Smith, and Ben Thorne have banded together to offer his high-quality Carolina-style BBQ alongside Southpaw’s award winning, well-curated cocktails, house-brewed craft beer, and warm service.
